Well i was sitting here, and looking at my ad-dons, and i was wondering how many of you would find some of these to be useful, so I thought i would create a list of of the ones I use/find useful. And feel free to add any more.
Well this add on here is a in game MP3 player for, i find it to be useful for those of you who play full screen-http://wowui.incgamers.com/?p=mod&m=4887 A fun little game, that most of us used called bejewled-http://wow.curse.com/downloads/wow-addons/details/bejeweled.aspx

Thanks for the link to the MP3 player. I like to listen to my own music rather than the game's, and even though I run windowed, it's still irritating to have to ALT+TAB between WoW and my MP3 player, so the MP3 Player addon you linked to is good stuff. In addition to the link you provided it's also available on Curse for those that enjoy the Curse client (I personally don't.)
Drathal's HUD is a neat little HUD mod that I've used and enjoyed for quite some time. It's very intuitive and informative compared to the standard HUD, once you get used to it, putting Health and Mana/Rage/Energy/Rune information for both you and your enemy right where your vision is most likely focused; on your character. Here's the link to the latest version on Curse.
EDIT: Ignore the previous edit that was here; I somehow missed expanding the options menu. Turns out a lot of the features that I'd thought were removed were still there. Also found out that DHUD now supports dogLib tags for formatting data fields, allowing for immense customizability of how it displays your vital stats.
FishingBuddy is an awesome little addon that helps ease up many of the repetitive tasks of fishing. It's not a bot (player involvement is still necessary), but it makes fishing far more bearable and fun. It includes features like auto-swapping equipment when fishing (equip your pole and it'll automatically equip anything else you've designated as fishing gear), automatically adjusting volume levels to make hearing the sound indicators of fishing easier, and even automatically applying baits to your rod when your existing bait runs out. It even allows you to start and stop fishing with a double-right-click when you have your rod out. Here's the Curse link for it.
EDIT: FishingBuddy has improved immensely since the last time I used it. It's got several new features, the auto-lure system works more reliably, and it integrates with WoW's new Equipment Set system, allowing you to directly specify which equipment set is your Fishing set, and auto-equip it accordingly.
I've not personally used it, but many people use and swear by QuestHelper. This addon makes questing easier, helping you find quests, find and complete objectives, and get your rewards. Another similar addon, which I have used and can highly recommend is Carbonite. Use whatever works best for you, but Carbonite does have a lot of other neat little UI features not directly related to questing.
